Irish Coffee: History in the Making.... The first Irish Coffee was reputedly made by chef Joe Sheridan who tended the restaurant at the air base in Toynes, which later became Shannon Airport.
The story goes that late one night in 1943 Joe Sheridan administered coffees to some weary passengers, adding a drop of something to liven them up. "Hey Buddy," said an American traveller, "is this Brazilian Coffee?" "No," said the chef, "it's Irish Coffee."
'Coffee Culture' is wide awake in Ireland. As more and more people ask for cappuccinos, espressos and lattes, there is an explosion of interest in speciality coffees. Bewley's are the market leaders for supplying coffee in Ireland.

Irish Coffee Recipe 1:
Ingredients:
- 4 ozs. hot coffee
- 1 measure (3 cl) of Irish Whiskey
- 1 teaspoon of raw sugar
- 1 heaped desert spoon of whipped cream
Preparation:
- Heat a coffee glass
- Pour in one measure of Irish Whiskey
- Add 2 - 2 teaspoons of sugar.
- Fill the glass with strong black coffee, to within one centimetre of the rim
- Stir well to disolve sugar
- Top off rim with a heaped desert spoon of lightly whipped cream, slightly areated so that cream floats on top.
- Do not stir after adding cream, as the true flavour is obtained by drinking the hot coffee and Irish Whiskey through the cream.

Irish Coffee Recipe 2
Ingredients:
- 4 ozs. hot coffee
- 1 measure (3 cl) of Irish Whiskey
- 1 teaspoon of raw sugar
- 1 heaped desert spoon of whipped cream
Preparation:
- Pre-warm a stemmed glass
- Add hot strong coffee to fill the glass
- Add the whiskey
- Add the sugar and stir in the coffee
- Float the whipped cream on top
- Drink the coffee through the cream (ie. do not stir after adding the cream)

Irish Coffee (modern recipe)
Ingredients:
- 1 oz. Kahlua
- 2 ozs. Irish Whiskey
- 4 ozs. hot coffee
- Splash of hot milk
- Dollop of whipped cream
- mint sprig
Preparation:
- Place all contents (except whipped cream) in a shaker. Shake well, pour and serve in mug with dollop of whipped cream and sprig of mint on top.
